OLIVE OIL & BUTTER POACHED COD

Cod Fish fillet
3 Tbsp. of Unsalted butter
3 Garlic cloves
Thyme (to your taste)
Melt 3 tablespoons of the butter in a medium-sized saucepan over medium heat, Add 3 mince Garlic with Thyme and cook until they are golden brown (the smell is beyond amazing). This is the exact moment when we gently proceed to place the Cod fish into the pan.
Now in this next step we must act fast by turning the heat from medium to high and allow the fish to cook for three minutes once the cooking liquid begins to boil then carefully flip your Cod fish fillets and turn the heat down to low and cook for an additional one minute.
Remove fish from poaching liquid and sprinkle with some chives. Serve with your favorite steamed veggies, Baby Bok Choy is a perfect side dish for our poached Cod.
