POTATO SALAD


Ingredients


  • 6 large peeled potatoes, cooked and diced

  • 1 cup mayonnaise

  • 1 cup diced and cooked carrots

  • 1 cup cooked peas

  • 1/4 cup crema de leche aka heavy cream

  • Salt and pepper to taste

  • 1/2 cup shallot onion

  • 1/4 cup chopped fresh cilantro or parsley

  • 1/4 cup of small diced tomatoes (remove all inside watery seeds)

  • 1 diced boiled egg (remove egg yolk)

  • Some chives (optional)


Directions


In a small bowl whisk together the mayonnaise, heavy cream, salt, pepper. Set aside. Then place the potatoes in a large bowl, add the onions, tomatoes, carrots, peas, egg and cilantro. Add the mayonnaise mixture and toss well. Refrigerate until ready to serve.

Serve cold or at room temperature.


Personal tips


Do not over cook the potatoes, otherwise it will become mash potatoes. You can sprinkle some chives when ready to serve, but it is up to you. I personally love the fresh green flavor added at the end when about to serve for the table.
